A number of readers (myself include) are waiting with bated breath for
the performance numbers of the 210hp-rated RV10 currently under
construction at Vans.
But couldn't a test along the following lines be easily performed:
Load the plane to replicate the anticipated W&B with the smaller engine
(less fuel or ballast, fewer passengers, or whatever). Then launch
using the manifold pressure corresponding to 20% less than nominal, and
take some data.
Of course, you wouldn't hit the numbers perfectly; prop-related issues
and similar stuff would make the test less than ideal. But I'd expect
you wouldn't be that far off.
Or is there something I'm missing?

Van's has estimated performance for 210 HP (and 235 HP). I know
because it says so on the same page you linked to.... :) I've done a
few calcs on my own and they seem to have made straight forward
assumptions regarding speed and climb rate. Climb rate is likely to
be most accurate if compensated for lower engine weight (not sure if
they did this). Speed is hardest to estimate/model as it is strongly
dependent on drag (form, cooling, etc).
I bet they have made some partial power take offs, clmbs, etc at
altitude to evaluate performance. This should be part of any test
program (max cruise to slow flight then stall behavior)
The confirmation will come when the 210 HP is flying. I suspect they
are right on their targets as they have been so far. I will likely go
with something closer to 200 HP. Between 210 and 260 HP cruise speed
is forecast to be only 13 mph less....

IN fact, Van's has already done this -- i'm not sure if they loaded
the airplane or did it mathmatically -- and their rv10 brochure
includes projected numbers for the 210 version. I'll bet they come
in pretty close.

When I was at the Golden West Flyin last month, the RV -10 folks were talking
about a reconfigured cowling. I suspect that "real" numbers will not be
forthcoming until the final cowling is sitting out on the ramp and they have had
time to fine tune the amount of cooling they will need.
