I'm getting my shop set up for a -10 empacone kit.
Any builders out there care to provide input on if
your bench was too small, just right, etc? I have
limited space (1/2 of a 2.5 car garage) and want to
maximize space, but don't want have a problem with
bench space. Ideally, I'd like to make a bench/dimple
table together to save room.
Thanks.

Smallest that you could get away with is about 30" x 8'. I'm
building in about a 1.5 stall size area in a 3 car garage and have a
12' along one wall and an 8' in the middle. It is important when you
are working on the wings to be able to get to all sides easily. I
built the small bench when I started the wings and since have mainly
used the long bench for the manual, tools, and working on small parts.
I made a 2x4' platform that I get out when I need to dimple and have
a similar sized 3/4" thick backriveting setup that I routed out for
the metal plate.

I built two of the standard EAA work benches, except that I provided
a 2" overhang all around for clamping, for a top dimension of
64"x28" for each table. I also built a platform that I use between
the benches to support the DRDT-2 dimpler flush with the tops, and I
also routered out a hole for the back riveting plate, which is
mounted into one of the tops. The two benches together worked well
for the HS construction. I'm only working on the elevators right
now, but so far, so good. If need be, I can always build an
additional bench.

Paul,
I used two EAA 1000 benches with casters on them each are 2' X 5'. I made the frame an 1-1/2" smaller to give me some benchtop to clamp to if needed. I worked on the top wing skins this weekend and all went well. I'm working in 1/2 of a 2 car (for now). As far as a dimple table, I used my regular benches and went to Home Depot and picked up some 2" thick styrofoam insulation. I put the rubber sheets that are used to keep floor rugs from slipping on the bench(Home Depot as well), place the C-frame where I think it will work the most holes and then place the Foam blocks next to the C-frame. Lots of flexability and it has worked great so far. The rubber sheet cushions the impact and keeps all the stuff from moving around. When I'm done I put the foam up against the wall and the C-frame goes underneath the bench...saves room for me.

I made a bench the size of a standard sheet of plywood. I didn't actually
make it into a dimpling bench per se. When I want to dimple I just put
some 2x4s up there on the bench with the dimpler and put some loose carpet
on top. Works out fine. I put the appliance tools (bandsaw, drill press,
etc.) up on there as needed and take them back down when through. I'd say
it's working out pretty well, but if it were bigger I could leave my vice
permanently attached to one side and wouldn't take the other tools down so
often.

Paul,
When the tail kit boxes arrived, we placed the large flat one on saw horses about waist high. Popped open the top to do the inventory and reloaded the box so that the items needed first were on top and organized by sub-kit. Put the top back on so it would slide with an inside brace to center it on the box. Slide the top off for a few inches of overhang and have room for clamping. So the original shipping box is a 4' x 8' plus work bench along with parts storage. This is a great space saver and has worked fine for the VS, rudder and now the HS. Some of the other builders have good ideas for later but this could get you started.
