In the past when people were building airplanes, they had to have
them periodically inspected by an appointed memeber from the FAA
before they closed wings, control surfaces, etc.... Do you still
have to have someone inspect your work periodically, or just when you
have the final airworthiness inspection?

No, it is not required (in the US anyway). The EAA has a tech counselor program where you get 3 inspections during the building process, and you can use that to get a discount on insurance. But the requirements say that you only have your final inspection by the FAA or DAR for your airworthiness certificate.
