What determines a HVLP setup?
Can it involve the air compressor or is it a stand-alone unit?
Is the gun what makes it HVLP?
Is gravity feed gun the better style?

HVLP has nothing to do with the compressor. An HVLP (High Volume Low Pressure) gun is an attribute of the gun. It's name obviously implies it uses more air, but at lower pressures. What you get is a gun that has virtually no overspray, and won't work your compressor to death. Any descent sized 10 gallon or better compressor should do fine, but of course the larger the better.
