I finished my tanks a while ago and have two extra ProSeal cartridges
sitting in the fridge. My wife wants them out of there. Do I have an
excuse to hang onto them? Will I need some ProSeal later in the
project? I saw something about sealing the firewall, but Van's has a
different sealant for the firewall, right? And these tubes officially
expire next month, although they've been in the fridge ever since I
got them.

Keep it. The stuff is invaluable. You can use it to help attach hinges to your cowl, to attach the canopy to its structure, and to seal various gaps in your firewall. You might even need a bit to fix a leaky tank access plate...

I would keep them. Proseal is still usable years later for
odds&ends. I still have a can from my RV-8 4 years back and it still
works great for little jobs like filling in blind rivets, holding
down a wire bundle, the trailing edge of my RV-7A tail surfaces, etc.
