Any preference to capacitance or float type fuel senders? I would like
to install an engine monitor in my 7 when I'm done. Will capacitance
senders be compatible with most of the new engine monitors?

You have to buy a converter device for any on the guages to 'read'
the capitance sender.
Its an inline circuit board, in shrink tubing, with a BNC connector
on one end and two wires on the other.
I have the cap senders, but in hind sight I would put a float unit
in the tanks.
"they've been doing it that way for a long time" statement has some
validity here.

If I could go back I would get capacitive senders. I have the float ones
from vans and am not too happy with them. Seems like one of them has gotten
stuck in the full position don't ask me how it's possible - i checked the
wiring and that's all fine.
If you know what you are going to get for a engine monitor then the choice
is a lot easier. I have the Grand Rapids setup (www.grtavionics.com) with
EFIS and EIS with the fuel flow options so there really are 3 ways to be
aware of the fuel level:
1. visual inspection (most reliable)
2. fuel level indicator (not very accurate with our fuel tanks not level
will show full for quite a while)
3. actual fuel totalizer that calculates endurance etc for you in flight
