I have just installed the rudder pedals assembly and I am now
installing the rudder cables. One question (perhaps silly) assaulted
me: since there´s not any spring on Van´s plans for the rudder
control, how come the rudder maintains its neutral position?

The wind weather vanes the rudder. Your feet on the rudder peddles keep the cables tight.
If trim is necessary, most people add an small metal tab to the trailing edge of the rudder and "bend" it to suit the amount of correction needed providing ground-adjustable rudder trim.
I have seen people add springs to the rudder peddles, similar to the system used for aileron trim. If this is done with a servomotor, or manual lever, you would then have flight-adjustable rudder trim.

It sounds like you've noticed that there isn't a "full loop" of cable
connecting the backs of the rudder pedals to move one pedal forward
when the other goes back. On the ground, if you (or the wind) moves
the rudder to the right, the left pedal gets pulled forward and stays
there. If the rudder then moves to the left, the right pedal moves
forward, and when it recenters, both cables are hanging slack until
you put your feet on the pedals and push them back again.
I suppose you could add springs behind the pedals to pull them back
into position on the ground... but why?
In flight, it isn't an issue, because the 150mph breeze keeps the
rudder dead center and your feet are there to keep the pedals where
they belong. ;-)
